gain 1 lb. of muscle in 1 week ?

I was instructed by my doctor that I MUST gain at least 1 lb. by next Thursday , as my anorexic tendencies have caused me to drop to 73 lbs (I was 82 lbs. at the end of June) .
Here is my Usual day of eating :
Breakfast – 100 cal english muffin with 1 tbsp peanut b***er
or about 140 calories worth of cheerios and 90 cals of 1% milk
Lunch – Egg beaters omelette (equivalent to 2 eggs) with a bit of reduced fat cheese and 1 tbsp salsa , and either 1/2 of peas or lettuce with 1 1/2 tbsp dressing
Snack – 2 slices of Hillshire Farms ultra thin ham
Dinner – 1 cup of 1% milk , with some form of meat , a starch and a vegetable (whatever my mom makes that night)
How can i gradually increase my calories so i can gain 1 lb of lean MUSCLE (I really dont want to gain in fat !) and what should i eat ? Also , I run in the morning , and also sail bike and dance .
